Flaky Buttermilk Biscuits made from Scratch!

These biscuits are featured on our Home Cooking Kitchen YouTube™ Channel, Episode 1!

Oven: 400ºF Baking time 20 to 25 minutes (depending on your oven)


2 c AP flour

2 Tablespoons Sugar

4 teaspoons baking powder

1/2 teaspoons baking soda

1-1/2 teaspoon table salt

16 Tablespoons (2 sticks) unsalted Butter (frozen/ grated)

1.5 cups buttermilk (cold)

Combine all dry ingredients in mixing bowl.

Grate the frozen butter and mix into dry ingredients

Slowly add buttermilk

combine all but don't over work

If it is warm or humid, put bowl of dough in refrigerator for about 10 minutes.

Bring out, flour work surface, and turn dough out.

Using either your hands or rolling pin, roll dough out to about 13"x9" rectangle

You may either cut these out now, or even better, create layers with folding.

Fold the dough in one third from the top to the middle, then one third from the bottom to the middle. Repeat 5 times flouring lightly as you go.

Flour your biscuit cutter and cut biscuits.

Place on either buttered or parchment papered cooking sheet. Refrigerate for about 20 minutes.

Put in 400ºF preheated oven for about 20 to 25 minutes - turning the cookie sheet around about 1/2 through cooking. There will be butter coming from the biscuits, just leave them and they will cook fine.

Let sit about 5 minutes before eating!
