Roasting Garlic with Herbs

Roasted garlic is one of the absolute wonders of the culinary adventure! I love roasted garlic and it is so simple you can create this treat in just a few minutes.

I use a terra cotta roasting dish and it just seems to create an even temperature and it is only used for roasting garlic, so nothing else is contaminated. This vessel can be washed in the dishwasher, however, we hand wash it.

Begin with a fresh head of garlic. If you see sprouts coming from your garlic or it is not plump, it is probably not fresh. You can use older garlic, but you may not get as much as you would like.

With a sharp knife cut the top off the garlic to expose the individual garlics. You may leave the paper on, it will not matter.

I have added fresh Rosemary and Oregano as they will bake down and make a wonderful addition to our dish.

Using Extra Virgin Olive Oil, drizzle generously into the head of garlic and a little around it. Sprinkle with kosher salt, cover with the lid and place into the oven.

I use a 350ºF oven and about 30 minutes.

Once cooked take the garlic head and place your knife along the dull side and push the roasted garlics out. Your garlic will be hot, so you might want to wear a glove.

The herbs will be cooked down, use whole or chop to add to your favorite dish.
